Guinness Cake
Guinness Cake is very popular during St. Patrick's Day. It's also quick and easy to make. Guinness Cake is best eaten after a week of it being sealed in an airtight container.

Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, tapping out excess flour.

Combine flour, unsweetened cocoa, baking soda, and salt in a large bowl, whisking together to distribute the leavening agent evenly.

Heat the Guinness stout in a saucepan over medium heat until it begins to steam, then remove from heat (do not boil).

Add unsalted butter to the warm Guinness and stir until completely melted and combined.

In a separate bowl, whisk together sugar, eggs, vanilla extract, and sour cream until well blended and smooth.

Pour the Guinness-butter mixture into the egg mixture, whisking gently until incorporated.

Add the wet ingredients to the dry ingredients, folding together with a spatula until just combined—do not overmix.

Pour batter into the prepared cake pan and smooth the top with a spatula.

Bake in the preheated oven for 35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

Remove cake from oven and allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
