Preheat oven to 325°F (160°C). Mix chocolate wafer crumbs with melted margarine and 2 tablespoons sugar in a bowl until the mixture resembles wet sand.

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 5 minutes until set, then remove and let cool slightly.

Beat softened cream cheese and 2/3 cup sugar together in a large bowl using an electric mixer until smooth and creamy, about 2-3 minutes.

Add whole large eggs one at a time to the cream cheese mixture, beating on low speed after each addition until just combined. Do not overmix.

Fold the melted mint chocolate chips and vanilla into the cream cheese mixture until evenly distributed.

In a separate bowl, beat the 3 egg whites until soft peaks form. Gently fold the egg whites into the cream cheese mixture in two additions until just combined.

Spread the marshmallow creme evenly over the cooled crust, then carefully pour the chocolate-mint cheesecake filling over it.

Bake the cheesecake at 325°F (160°C) for 50 minutes until the edges are set but the center still jiggles slightly when tapped.

Turn off the oven and crack the door open about 2 inches. Allow the cheesecake to cool in the oven for 30 minutes to prevent cracking.

Remove the cheesecake from the oven and let it cool to room temperature on a wire rack, about 1-2 hours.

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight before serving to allow the flavors to develop and the texture to set properly.
