Combine grated green bananas, grated coconut, grated sweet potatoes, flour, baking powder, salt, vanilla, and mixed spice in a large mixing bowl, stirring until the mixture is well incorporated and resembles coarse breadcrumbs.

Pour coconut milk into the mixture and stir thoroughly until a thick, cohesive dough forms with no dry pockets remaining.

Bring a large pot of salted water to a rolling boil over medium-high heat.

Using two spoons or a dough scoop, form the mixture into oval or round dumplings approximately 3-4 inches long, dropping each one gently into the boiling water as it is formed.

Simmer the dumplings for 8-10 minutes until they float to the surface, then continue cooking for an additional 5 minutes to ensure they are cooked through.

Remove the cooked dumplings from the boiling water with a slotted spoon and transfer to a clean bowl or plate, reserving 1 cup of the cooking water.

In a separate large pot, combine brown sugar with the reserved cooking water and bring to a simmer over medium heat, stirring until the sugar is fully dissolved.

Carefully add the cooked dumplings to the sugar syrup and stir gently to coat them evenly, simmering together for 3-5 minutes so the dumplings absorb the syrup.
