Preheat the oven to 350°F (175°C) and grease a 9-inch loaf pan with butter or cooking spray.

Cream together the butter and sugar in a large bowl using an electric mixer or by hand until the mixture is light and fluffy, about 2-3 minutes.

Beat in the 2 eggs one at a time, mixing well after each addition until fully incorporated.

Stir in the crushed bananas and vanilla extract until combined and smooth.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Fold the dry ingredients into the banana mixture using a spatula until just combined; do not overmix.

Pour the batter into the prepared loaf pan and smooth the top with the back of a spatula.

Bake in the preheated 350°F oven for 50 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
