Preheat the oven to 350°F (175°C) and grease a loaf pan with margarine or cooking spray.

Cream together the margarine and sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.

Beat in the eggs one at a time, stirring well after each addition to fully incorporate.

Combine the sifted flour, baking powder, bicarbonate of soda, and salt in a separate bowl and mix well.

Fold the flour mixture into the creamed mixture alternately with the mashed banana, beginning and ending with the flour mixture.

Stir in the chopped parched peanuts until evenly distributed throughout the batter.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.

Remove from the oven and allow the loaf to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
