Banana Nut Bread

Preheat the oven to 350°F (175°C) and grease a loaf pan with oil or cooking spray.

Combine the well-ripened banana chunks, eggs, milk, oil, and vanilla extract in a blender or mixing bowl. Blend or mash until smooth and well combined.

In a separate large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and nutmeg.

Pour the wet banana mixture into the dry ingredients and gently fold together with a spatula until just combined; do not overmix.

Stir in the chopped walnuts or pecans (or wheat germ) until evenly distributed throughout the batter.

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
