Banana Loaf

Preheat oven to 350°F (175°C) and grease a loaf pan with margarine or cooking spray.

Cream together ½ cup margarine and 1 cup sugar in a large bowl until light and fluffy, about 2-3 minutes.

Beat in 2 eggs one at a time, mixing well after each addition.

Combine ¼ cup water, ¼ cup milk, and 1 tsp vinegar in a small bowl; let sit for 1 minute to sour the milk.

Peel and mash 3 bananas until smooth, then fold into the margarine mixture.

Whisk together 2 cups flour, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp salt in another bowl.

Alternate adding the dry ingredients and the soured milk mixture to the banana mixture, beginning and ending with dry ingredients; stir until just combined.
