Whole Wheat Pita Bread (Keith's Version)

Homemade whole wheat pita bread with dual cooking options: pan-fried or oven-baked

Ingredients

  • lukewarm tap water
    1 1/4 cups
  • sugar
    1 tbsp
  • Instant Yeast
    1 tbsp
  • whole wheat flour
    1 1/2 cups
  • salt
    1 tsp
  • white flour
    1 1/2 cups

Method

In a large bowl add the lukewarm tap water, sugar and yeast. Whisk until smooth.

Add the whole wheat flour and salt. Beat again until smooth.

Gradually add the white flour. As dough gets firmer, knead in the flour -- may need a little more -- just until dough is no longer sticky.

Cover and let rest for 15 minutes.

Place dough on a well floured surface. Roll out to a round disc. Cut like a pizza into 8 or 12 equal wedges. Shape each wedge into buns, pinching edges under.

Roll each bun into discs. Place discs on a towel. Cover with another towel and let rest for 50 minutes.

To fry: Place pitas in a lightly greased preheated medium heat fry pan. Cook about 2 1/2 minutes on each side or until nice and brown.

To bake: Place pitas in a preheated 435-degree oven on sprayed or greased cookie sheets for 12-15 minutes until lightly browned and puffy.

Before serving, cut each pita in half or into smaller wedges.
