Preheat the oven to 400°F (200°C). Place the pita bread on a baking sheet and set aside.

Dice the tomatoes, green bell pepper, and onion into small, uniform pieces for even cooking and distribution.

Chop the ham into bite-sized pieces and set aside with the prepared vegetables.

Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and green bell pepper, cooking for 3-4 minutes until they begin to soften.

Stir in the diced tomatoes, garlic clove, thyme leaves, salt, crushed red pepper, and black pepper, cooking for 2 minutes to blend the Cajun spices and soften the tomatoes slightly.
