Ingredients

  • soy flour
    1 cup
  • potato starch flour
    1/2 cup
  • rice flour
    1/4 cup
  • baking soda
    3/4 tsp
  • cream of tartar
    1 1/4 tsp
  • salt
    1/2 tsp
  • shortening
    1/3 cup
  • sugar
    2/3 cup
  • eggs
    well beaten
    2 unit
  • mashed banana
    1/2 cup
  • Optional: 1/2 cup chopped nuts
    1 unit

Method

Sift together the flours, baking soda, cream of tartar, salt.

Cream shortening.

Slowly include sugar to cream by lightly beating together.

Achieve a light and fluffy consistency.

Include well beaten eggs by beating.

Slowly incorporate the dried mixture, alternate adding the mashed banana.
