Ingredients

  • c. Crisco and 1/4 c. margarine

Method

Warm the milk to 110°F (43°C) and dissolve the yeast cakes in it, letting it sit for 5 minutes until foamy.

Cream together the Crisco, margarine, and sugar until light and fluffy, then beat in the 2 eggs plus 1 additional egg one at a time.

Combine the yeast mixture with the creamed mixture, then gradually add the flour and salt, mixing until a soft dough forms.

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic, then place in a greased bowl, cover, and let rise in a warm place for 45 minutes until doubled.

While the dough rises, prepare three filling mixtures: combine 3 cups of chopped walnuts with 1 cup sugar; combine 1 cup unsweetened cocoa with 1 cup sugar; combine 3 cups poppyseed with 1 cup sugar.

Punch down the risen dough and divide it into three equal portions, then roll each portion into a thin rectangle approximately 12×16 inches.

Brush each rectangle with melted butter (about 1/6 pound per rectangle), then spread one filling mixture evenly over each rectangle.

Starting from the long side, roll each rectangle tightly into a log, then place seam-side down on greased baking sheets.

Cover the rolls and let them rise in a warm place for 30 minutes until puffy.

Prepare an egg wash by beating 1 whole egg with a pinch of salt and 1 teaspoon sugar, then brush it over the tops of each roll.

Bake in a preheated 375°F (190°C) oven for 40-45 minutes until golden brown and a skewer inserted in the center comes out clean.

Cool the rolls on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
