Warm water to approximately 110°F (43°C) and dissolve the yeast with a pinch of sugar, then let it sit for 5 minutes until foamy.

Combine pastry flour, remaining sugar, allspice, and cinnamon in a large bowl, creating a well in the center.

Pour the yeast mixture and beaten egg into the flour well, then gradually mix in water as needed to form a soft, cohesive dough.

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic, then place in a lightly buttered bowl to rest.

Cover the bowl with a damp cloth and allow the dough to rise in a warm place for 30 minutes until it doubles in size.

Punch down the risen dough and roll it out on a floured surface into a rectangle about ¼-inch thick.

Brush the dough generously with softened butter, then sprinkle evenly with additional cinnamon and sugar mixture if desired.

Roll the dough tightly from the long side into a log, then cut crosswise into 1-inch-wide rolls.

Place rolls in a buttered baking pan, leaving space between each for expansion, then cover and let rise for 10-15 minutes.
