Method

Preheat your oven to 375°F (190°C) and lightly grease a round baking pan or cast iron skillet with olive oil.

In a large mixing bowl, combine the flour and salt, then make a well in the center and pour in the olive oil along with enough warm water to bring the dough together into a firm, smooth consistency.

Knead the dough on a lightly floured surface until it becomes smooth and elastic, folding it over itself repeatedly to develop structure.

If following the traditional custom, press a clean coin (such as a walnut or a foil-wrapped coin) into the center of the dough before shaping, as it is said to bring luck to whoever finds it.

Shape the dough into a round, flat loaf and place it into the prepared pan, pressing it gently to fill the shape evenly.

Score the top of the bread with a knife in a crosshatch or decorative pattern, then brush the surface generously with olive oil.

Bake in the preheated oven until the bread is golden brown and sounds hollow when tapped on the bottom.

Remove the cesnica from the oven and allow it to cool slightly before serving; traditionally, the bread is broken by hand among family members on Christmas morning.
