Romaine, Pear and Blue Cheese Salad

Ingredients

Citrus dressing

Directions

  1. Combine dressing ingredients in a jar and shake well to blend.
  2. Set aside.
  3. Cut romaine lettuce leaves into 1 inch strips, including ribs.
  4. Remove stems from spinach and combine in bowl with lettuce.
  5. Rinse artichoke hearts in cold water, pat dry with paper towels, then cut in quarters and add to bowl.
  6. Add pears and blue cheese to bowl.
  7. Toss with dressing and serve.
