Mushroom Stir-fry Wrap

  1. In a small bowl, combine first five ingredients.
  2. In another bowl combine cornstarch and water.
  3. Heat wok over high heat.
  4. Heat peanut oil.
  5. Stir fry mushrooms until soft (2 minutes).
  6. Add zucchini and stir fry for 3 minutes.
  7. Add scallions and stir fry for 2 minutes.
  8. Stir in soy sauce mixture and snow peas.
  9. Make a well in the center and add cornstarch.
  10. Stir quickly as it thickens.
  11. Add peanuts and stir.
  12. Serve in a tortilla with rice.
