Liberian Ginger Beer

Ginger beer may be diluted with water or extra sugar, or ginger may be added to obtain desired taste. Liberians make the ginger beer with the peelings of pineapple only.



  1. Chop ginger finely, and then beat to a powder.
  2. Add pineapples.
  3. Pour boiling water over and allow to cool to lukewarm.
  4. Add yeast which has been dissolved in ½ cup of lukewarm water.
  5. Allow to stand overnight covered.
  6. Add molasses on the following day.
  7. Chill and strain.
  8. Bottle tightly and refrigerate.
