BBQ Beef Ribs

BBQ ribs [1][2] are a great alternative to the classic pork ribs and more economical.


  • 5 tbsp yellow mustard
  • 1x4 bone rack of beef short ribs (~4.5 lbs)


  • 1/4 cup smoked paprika
  • 1 tbsp mild chili powder
  • 1/2 tbsp freshly ground balck pepper
  • 1/2 tbsp sea salt
  • 2 tbsp vegetable oil


  • 1/4 cup light brown sugar
  • 2 1/2 tbsp honey
  • large pat of unsalted butter
  • 1 beef bouillon cube, crumbled
  • 1 1/2 tbsp water


Heat oven to 250 degrees F. Take mustard and rub the meat completely. Combine all rub ingredients, as listed above, then rub all over the meat with the mustard already on it. Put ribs in roasting pan bone side down, cook for 5 hours. marinade combine all marinade ingredients, as listed above in a sauce pan on medium heat. Include the tbsp of water, stir and combine ingredients. Over a large sheet of heavy-duty aluminum foil pour the marinade. Spread the marinade around with brush, then place meat on the sheet, meat side down. Close the foil around the meat, then wrap another foil around to totally enclose the meat. Put back in the roasting pan, meat side down, cook for an hour. Remove ribs from oven, increase heat to 275 degrees F. Open the foil, get rid of the excess juices and marinade. Lay ribs meat side up and cook for 35 min. Let meat rest on a plate or board for ~10 min, then slice to 1/4" slices. Finish off brushing the meat with juices from the board and sprinkle with sea salt.
