Warm Lemon and Thyme Potato Salad

  1. Bring water to boil in large saucepan over high heat.
  2. Add potato slices.
  3. Reduce heat to medium-low.
  4. Simmer, covered, 10 minutes or until potatoes are barely tender.
  5. Pour into colander; drain well.
  6. Sauté garlic in oil in large deep skillet over medium heat, 1 – 2 minutes.
  7. Stir in lemon juice and thyme; heat through.
  8. Add drained potatoes; stir lightly to coat potatoes with dressing.
  9. Season with salt and pepper.
  10. Reduce heat to medium-low.
  11. Cover and cook 4 – 5 minutes, turning once.
  12. Arrange lettuce on 6 salad plates; top with hot potato mixture.
  13. Optional: garnish with cherry tomatoes and fresh thyme.
