Thai-style Pasta Salad

  1. In medium bowl, whisk together all dressing ingredients.
  2. Set aside.


  1. Bring large saucepan of lightly salted water to a boil.
  2. Add snow peas and cook 1 minute.
  3. Using slotted spoon, remove to colander.
  4. Drain, rinse under cold water and drain again.
  5. Add noodles to boiling water and cook according to package directions.
  6. Drain, reserving ½ cup of cooking liquid.
  7. Pat snow peas dry.
  8. Cut into thirds on diagonal.
  9. In large serving bowl, combine noodles and enough reserved cooking liquid to moisten.
  10. Add snow peas, ⅓ cup dressing, coleslaw, radishes, tomatoes, cucumber, sprouts and onion and toss to mix.
  11. Serve remaining dressing on the side.
