Procedures

  1. Heat oil in a medium sized skillet.
  2. Add the rice and Onion and cook, stirring over very low heat for 20 minutes.
  3. Stir in the jalapeno, tomato, salt and pepper.
  4. Add two cups boiling chicken broth.
  5. Bring rice to a boil.
  6. Lower heat, cover and cook for 25 minutes.
