Irish Carrots and Parsnips

This is one of the healthier Irish recipies for vegetarians. It's also a popular dish during St. Patrick's Day.



  1. In a saucepan filled with water, simmer carrots and parsnips until they are tender. Drain.
  2. In a bowl, combine carrots, parsnips, broth, parsley, salt and pepper. Mash.
  3. Serve hot.
