Guinness Potato Salad

Try this delicious and spicy Irish salad. For vegetarians, use tofu instead of bacon. Tastes great! Serves 6.



  1. Boil potatoes (unpeeled) until tender.
  2. Peel and slice.
  3. Arrange potatoes in a bowl and set aside.
  4. Fry bacon until crisp.
  5. Cut into small pieces and mix with onion, celery and salt. Set aside.
  6. In another saucepan, melt butter and flour.
  7. Add mustard and sugar.
  8. Stir in beer and Tabasco. Stir continuously until mixture boils.
  9. Pour over potatoes.
  10. Add parsley. Toss lightly.
  11. Set aside for 1 hour.
  12. Just before serving, add bacon mixture and toss gently.
