Ginger Syrup

  1. Place 1 cup water, sugar, and ginger in small saucepan.
  2. Scrape seeds from vanilla bean into pan; add bean.
  3. Stir over medium heat until sugar dissolves.
  4. Simmer 2 minutes; remove from heat.
  5. Let stand at room temperature 1 hour for flavors to blend.
  6. Strain syrup into small bowl.
  7. Chop ginger.
  8. Can be prepared 1 day ahead.
  9. Cover and refrigerate ginger and syrup separately.
