Cranberry Muffins I

  1. Preheat oven to 400°F.
  2. Generously grease 12 muffin tins.
  3. Spread one heaping teaspoon of cranberries in each tin.
  4. Combine oats and milk.
  5. Let stand 5 minutes.
  6. Combine dry ingredients, mix well.
  7. Add butter and egg to mixture, beat well.
  8. Add to dry ingredients, mixing well until moistened.
  9. Fill tins ⅔ full.
  10. Bake 15-20 minutes or until light brown.
  11. Cool in tins for one minute.
  12. Invert on rack to finish cooling.
