Cheesecake [1] [2] is a well known dessert in New York, this particular recipe is New York style cheesecake.


  • 22 sheets graham crackers
  • 9 tbsp butter
  • 4x8 oz bars reduced fat cream cheese
  • 3/4 cup superfine sugar
  • 5 large eggs
  • finely grated zest of 1/2 lime

meringue topping

  • 3 large egg whites
  • generous 1/2 cup superfine sugar
  • 1/2 cup unsweetened shredded coconut


Heat oven to 310 degrees F. Grease springform cake pan, 10" in size. Crumble crackers into a fine consistency, combine with melted butter and spread in the bottom of the springform pan. Pack it down. Put the pan on a cookie sheet into the fridge to cool and set. Whip the cream cheese for a smooth consistency,gradually adding in the sugar. Include eggs, mix well. Include the lime juice. Pour this blended mixture over the graham cracker crust in the springform pan, spread evenly. Bake for ~50 minutes. Remove from oven and let cool for ~15 minutes. Turn up oven to 425 degrees F. meringue Beat egg whites until they form peaks, gradually include sugar. Fold in coconut gently. Spoon this onto the cooling cheesecake, create a ~3/4" thick topping. Bake for ~5 minutes for a golden colour to the meringue as well as a physical crispness. Leave to cool, then let sit in fridge for a few hours. Sprinkle with lime zest before serving.
