Banana Rice Pudding

Makes 8 servings.



  1. Combine rice, milk, butter and salt in medium saucepan.
  2. Bring mixture to a boil. Reduce heat and simmer 25 minutes, or until thick and creamy, stirring frequently.
  3. Add vanilla. Cool.
  4. Fold in 1 cup whipped cream and bananas. Line dessert dishes with wafers.
  5. Spoon pudding over wafers. Top with remaining 1/2 cup whipped cream and cherries.
