Scotch Broth [1][2] is a warm filling soup.



Boil the bay leaf, pepper, meat and water. Strain everything, rinse the meat under cold water. Boil again in the same amount of water, add salt and skim. Put everything else into the pot, omitting the butter and oats. Boil, then cover and simmer for 2 hours. Melt butter in a pan, add the oats to make them nutty brown. Combine with the soup for 10-15 minutes of simmering, then serve.
