Dressing

  1. Combine oil, wine, vinegar, parsley, sugar, salt and basil in screw-top jar.

Assembly

  1. Pour dressing over broccoli, squash, pepper and carrots in shallow dish.
  2. Cover and chill 2 to 3 hours.
  3. Add rice; toss lightly.
  4. Serve on lettuce leaves.
