  1. Clean and roast the Duck. Cool, remove bones and slice. Drain pineapple slices and dice.
  2. Place Duck and pineapple in alternate layers in a casserole.
  3. Add the pineapple juice mixed with oil, soy sauce, rum, water, Sugar and salt.
  4. Bake in moderate oven for 1 hour. Serve with rice and green salad.
