A cheesecake is basically a baked [[Custard|custard]]. There are many recipes for this dessert with ingredients varying from cream cheese to ricotta cheese to a healthier cottage cheese (for a 'lighter' version).  The crust on a cheesecake is optional. Some cheesecakes have a crust comprised of crushed cookies (ranging from the traditional graham cracker crust, a shortbread crust, chocolate cookie crust-the possibilities are endless)and some cheesecakes have no crust.

*4x8 oz bars reduced fat cream cheese

*3/4 cup superfine sugar

# Mix butter with crushed biscuit and press into a pie dish.

Heat oven to 310 degrees F. Grease springform cake pan, 10" in size.
# Beat lemon juice and condensed milk together.

Crumble crackers into a fine consistency, combine with melted butter and spread in the bottom of the springform pan. Pack it down. Put the pan on a cookie sheet into the fridge to cool and set.
# Pour into beaten cream cheese and mix thoroughly.

Whip the cream cheese for a smooth consistency,gradually adding in the sugar. Include eggs, mix well. Include the lime juice. Pour this blended mixture over the graham cracker crust in the springform pan, spread evenly. Bake for ~50 minutes.  
# Pour into pie dish.

Remove from oven and let cool for ~15 minutes.  
# Refrigerate for minimum of 24 hours

Description

Cheesecake [1] [2] is a well known dessert in New York, this particular recipe is New York style cheesecake.


Ingredients

  • 22 sheets graham crackers
  • 9 tbsp butter
  • 4x8 oz bars reduced fat cream cheese
  • 3/4 cup superfine sugar
  • 5 large eggs
  • finely grated zest of 1/2 lime

meringue topping

  • 3 large egg whites
  • generous 1/2 cup superfine sugar
  • 1/2 cup unsweetened shredded coconut

Procedure

Heat oven to 310 degrees F. Grease springform cake pan, 10" in size. Crumble crackers into a fine consistency, combine with melted butter and spread in the bottom of the springform pan. Pack it down.
