Basic Creole Sauce for Rice
- 1 or 2onions
- 1/4 lb.lean diced Bacon
- 2 tomatoes, peeled and seeded and diced
- 2 c.watercress
- 2 c.water
- salt and pepper to taste
- Slice onions very thin and sauté them in butter or oil with tomatoes and Bacon.
- Wash, dry and strip leaves of watercress and add into pan.
- When the watercress is wilted, add water, salt and pepper and allow to simmer 15 minutes.
