# For pancakes, combine flour, baking powder, salt, sugar, and nutmeg in mixing bowl. In a separate bowl, mix baking soda, egg, butter, vanilla, and milk. Combine both mixtures stirring only until blended. Fold in grated apple. Bake on hot, lightly greased griddle. When batter is full of holes, turn to brown on other side. Turn pancakes only once while cooking.
 
# For sauce, melt butter in a nonstick skillet over medium-high heat. Add apples and sautT until just brown, about 2 to 3 minutes. Add maple and corn syrup to apples and stir gently. Let cook another 2 to 3 minutes or until mixture thickens. Serve with Apple Pancakes.

Description

Apple Pancakes [1] [2] is a tasty breakfast treat.

Ingredients

  • butter to cook
  • yogurt, to serve
  • honey, to serve
  • cinnamon, to serve

pancake batter

  • 1 apple, coarsely grated, core and all
  • 1 large egg
  • 1 cup self-rising flour
  • 1 cup milk or water
  • good pinch of sea salt
  • 1 tbsp honey
  • pinch of ground cinnamon


Procedure

  1. Combine all pancake batter and whisk well.
  2. Over medium-high heat warm a frying pan and include a small pat of butter.
  3. Melt the butter.
  4. Spoon a ladle of batter onto the pan.
  5. Let pancake sit for a moment until little bubbles form at the top, then flip it.
  6. Repeat until each pancake is cooked.
  7. To serve add a spoon of yogurt, followed with a drizzle of honey an a dash of cinnamon. (all optional)
