Smoked mozzarella

Smoked mozzarella, also called mozzarella affumicata, is mozzarella cheese which has been smoked to enhance its flavour. It typically has a light golden brown outer shell and is lightly salted. Its low moisture content makes it ideal for slicing and melting.
