Ingredients

Directions

  1. In a large non-stick skillet, heat oil, add garlic and cook 1 minute.
  2. Add bell strips, sliced onion, cumin, oregano, and chile.
  3. Mix, cover, and cook over medium heat 10 minutes.
  4. Slice chicken in ½" strips and sprinkle with lemon juice.
  5. Add vegetables; stir.
  6. Cook, covered, medium heat 10 minutes more.
  7. Stirring occasionally.
  8. Add salt and pepper and garnish with parsley.
  9. Serve with "hash browns potatoes".
