Spicy Garlic Oil

This oil is nice for frying chicken, fish, and fries.

Ingredients

  • 1/2 gallon flavorless high smoke point oil, such as canola, peanut, safflower, grapeseed, and soybean
  • 40 cloves garlic
  • 8 Thai bird chiles, stemmed and havled
  • 1/2 tsp salt

Procedure

  1. Combine all ingredients in a large stockpot. Heat over low heat.
  2. Cook for 1 hour. Strain, cool, and store in the refrigerator until oil smells off, or oil looks smoky, or tastes rancid.
