Cottage Cheese and Spinach

Description
Ingredients
- 1 lb. spinach, washed well OR (2 CUPS CHOPPED FRIED leeks)
- 1 Tbsp. butter
- 2 eggs
- 1/2 tsp. salt
- 1 lb. dry cottage cheese (sometimes called pressed cottage cheese)
Procedures
- Chop spinach and remove stems; simmer in butter covered in frying pan; add salt and remove from burner.
- Cool slightly and add cottage cheese and eggs; stir well.
- Cool before using.
