Translated as "little rag" this pasta is oval shaped with a slight upward curl in the form of a small boat hull. Traditionally made with a rustic and rough texture, the ribs on this pasta work well to hold a variety of hearty pasta sauces. Cencioni has a chewy consistency for main dishes or salads.
