A variety of Italian dry sausage that is made from pork meat combined with fat (veal meat also for some recipes) and seasoned with pepper, chili flakes, garlic, and wine. The salami is typically stuffed in a casing and dry cured for several months however, it may also be smoke cured. Very spicy in flavor, Neapolitan sausages are formed into long, thin round sticks of salami.
