Ingredients

Directions

  1. Make the custard from the first three ingredients:.
  2. Heat the milk (or coconut milk) in a double boiler, or in a saucepan over low heat.
  3. Do not boil.
  4. In a bowl, mix the half cup of sugar into the beaten eggs.
  5. Slowly add about a quarter of the heated milk to the egg-sugar mixture, while stirring continuously.
  6. Slowly stir the egg-sugar-milk mixture into the remaining heated milk.
  7. Cook on low heat, until it thickens into a custard, stirring gently and continuously.
  8. Spoon it into a clean bowl and place in the refrigerator to cool.
  9. While the custard is cooling, cook the fruit:.
  10. Bring the water and three tablespoons of sugar to a boil in a saucepan.
  11. Add fruit pieces.
  12. Reduce heat and cook until tender, five to ten minutes, stirring occasionally.
  13. Mash fruit, or press it through a sieve.
  14. Spoon it into a clean bowl and place in the refrigerator to cool.
  15. Gently fold together custard and fruit.
  16. Spoon into serving bowls.
  17. Top with whipped cream, if desired.
  18. Serve immediately or keep in refrigerator for no more than a day.
