Recipe by Melicious Wikified by Drimble Wedge
Mix together:
- 1/2 c white sugar
- 1/2 c packed brown sugar
- 1 c pumpkin puree
- 1/2 c oil
- 1 egg
Add:
- 2 c flour
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 2 tsp cinnamon
- 1 1/2 tbs curry powder
- 2 tsp baking powder
Mix until blended, then add:
- 1 tsp baking soda
- 1 tsp milk
- 1 tsp vanilla
- 1 c chocolate chips (I think milk chocolate complements the curry best, but I'm sure others would prefer semi-sweet)
Bake at 375 for 10-12 minutes. Let cool for one minute on the sheet before transferring them to a cooling rack. They're soft and delicious!
