Ingredients
- 6 oz (170g) flour (self raising)
- 6 oz (170g) Unsalted butter or margarine
- 6 oz (170g) Caster sugar
- 3 eggs (170g, unshelled)
- jam and cream
Procedure
- Preheat the oven to 200°C(400°F, Gas mark 6)
- Put the butter into a bowl and mix with a wooden spoon until softened
- Add the sugar and mix
- Add the 3 eggs to this and the flour and mix until smooth
- divide it between two 7 inch (18cm) greased circle pans
- bake in the oven at gas mark 6 (200°C, 400°F) for 20 - 30 minutes (10-15 in a fan-assisted oven) until firm to the touch
- leave to cool
- turn one upside down and spread jam and cream over it and place the other on top
