Ingredients
- 2 cups chicken broth
- 1 cup cooked, deboned chicken
- 1 medium onion, diced
- 1 green pepper, diced
- 5 – 8 okra (gombo), sliced
- 1 can (400 g) ratatouille (or whole tomatoes)
- ½ teaspoon cayenne
- ½ teaspoon basil
- ½ teaspoon oregano
- 1 bay leaf
- pimento to taste
- ¾ cup uncooked rice (well washed)
