Description

A Tunisian cooked tomato and pepper salad

  • This recipe yields 4 servings.

Ingredients

Directions

  1. Preheat broiler.
  2. Line a baking tray with aluminum foil and place red bell peppers on tray.
  3. Spray peppers with olive oil spray.
  4. Broil 5 minutes per side.
  5. Heat oil in a medium-sized nonstick frying pan on medium-high heat.
  6. Add onion and garlic and saute 5 minutes.
  7. Remove peppers from broiler, and core, seed, and slice them.
  8. Add peppers and tomatoes to frying pan.
  9. Simmer 15 minutes.
  10. If mixture is watery, cook a few minutes more.
  11. Sprinkle with sugar and toss well.
  12. Add salt and pepper to taste.
  13. Place pita in broiler, which should still be warm from cooking peppers, for 2 minutes before serving.
  14. Spoon warm salad into a serving bowl or on individual plates with couscous salad and serve with warm pita bread.
