sweet potato Pudding
- 2 eggs -- Beaten
- 3/4 c sugar -- to 1 Cup
- 2 c sweet potatoes -- Raw, Grated
- 1 cn evaporated milk -- 13 Oz
- 1/2 c milk
- 1/2 ts cinnamon
- 1/2 ts nutmeg
- 1/2 ts salt
- 1/2 c butter (or margarine) -- Melted
- 1 c Flaked coconut
Combine eggs And sugar in a Large Mixing Bowl, Beating Well; Stir in Remaining Ingredients. Pour Into a Greased 1-1/2 Quart Casserole. Bake at 350 Degrees For 1 Hour.
