Gula Jawa ([[wikipedia:Coconut sugar|Coconut Sugar]]) is made from the Borassus (Palmyra palm) and is used in Javanese cuisine.  One can substitute either brown sugar (preferred substitution) or white sugar for Gula Jawa.
