  • Cook Time: 30 minutes (including time it takes for the water to boil)
  • Serves: 2

Ingredients

Procedures

  1. Heat 1 cup water to boiling in a small saucepan.
  2. Add carrots and cook for about 10 minutes or until tender.
  3. Drain, then set aside to cool.
  4. Place carrots in a blender then add apple juice, thyme, lemon peel, ice and lemon juice.
  5. Blend until smooth or to desired consistency.
  6. Serve in glasses garnished with mint.
