Ingredients

Procedures

  1. Thaw frozen fish; cut into serving-size pieces.
  2. Pat dry with paper toweling.
  3. Cut potatoes in uniform strips slightly larger than french fries.
  4. Fry a few at a time in deep hot fat (375°F) until golden, 5 to 6 minutes.
  5. Remove; drain and keep warm.
  6. In a bowl stir together ¼ cup flour and salt.
  7. Make a well in center of dry ingredients.
  8. Add water, oil and egg yolk; beat smooth.
  9. Fold in egg white.
  10. Dip fish in ¼ cup flour and then in batter.
  11. Fry fish in deep hot fat (375°F) until golden brown, 1½ to 2 minutes on each side.
  12. To serve, season fish and chips with salt.
