Spicy braised chicken

Ingredients

Procedures

  1. Make the red pepper sauce first, combine tomato sauce, paprika, ¼ cup red wine , grated ginger root , red pepper , cardamom , nutmeg, cloves, cinnamon , and allspice.
  2. Set red pepper sauce aside.
  3. In a large skillet cook onion and garlic in hot oil till onion is tender but not brown.
  4. Stir in red pepper sauce, turmeric, and 1 teaspoon of salt.
  5. Add chicken pieces to skillet.
  6. Spoon onion mixture over chicken pieces, bring mixture to boiling; reduce heat.
  7. Cover ; simmer about 30 minutes.
  8. Stir in ¼ cup dry red wine.
  9. Cook uncovered , about 15 minutes; turn chicken pieces often.
  10. Skim off fat.
  11. Serve with Ethiopian flat bread (or pita).

Notes

The highly spiced hot red pepper sauce is called " berbere' " which is the characteristic flavor of many eEthiopian dishes.
