Mix together:

  • 1/2 c white sugar
  • 1/2 c packed brown sugar
  • 1 c pumpkin puree
  • 1/2 c oil
  • 1 egg

Add:

  • 2 c flour
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 2 tsp cinnamon
  • 1 1/2 tbs curry powder
  • 2 tsp baking powder

Mix until blended, then add:

  • 1 tsp baking soda
  • 1 tsp milk
  • 1 tsp vanilla
  • 1 c chocolate chips (I think milk chocolate complements the curry best, but I'm sure others would prefer semi-sweet)

Bake at 375 for 10-12 minutes. Let cool for one minute on the sheet before transferring them to a cooling rack. They're soft and delicious!
