* 3/4&nbsp;lb. Fresh [[spinach]] 
* 1/2 jar roasted [[cayenne pepper|red peppers]] 
* 2 cups mixed salad greens 
* 2 sliced [[tomato]]es 
* Italian dressing


== Procedures ==

Flatten [[mozzarella|fresh mozzarella]] to 1/2" wide. Layer with [[spinach]] and [[cayenne pepper|red peppers]]. Roll up jelly-roll fashion from longest end. Slice and serve over greens and [[tomato]]es. Drizzle with dressing.
